Cinnamon Applesauce Muffins - makes 12 servings

1/4 cup margarine or butter, softened

2 tablespoons dark brown sugar

2 large eggs

3/4 unsweetened applesauce

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup white whole wheat flour

2/3 cup Splenda granulated sweetener

1 teaspoon baking soda

1 teaspoon baking powder

1 tablespoon plus 1/2 teaspoon ground cinnamon

2 teaspoons granulated sugar

  1. Preheat the oven to 400°F. Lightly spray 12 muffin cups with nonstick baking spray or use paper or foil liners.

  2. In a large bowl, cream the margarine and brown sugar for 3 to 4 minutes until fluffy. Beat in the eggs, applesauce and vanilla extract.

  3. In a medium bowl, stir together the flours, sweetener, baking soda, baking powder, and 1 tablespoon cinnamon. Using a large spoon or spatula, stir the flour mixture into the creamed butter mixture just until the dry ingredients are moistened.

  4. Spoon the batter evenly into muffins tins, filling each cup two-thirds full.

  5. In a small bowl, combine the granulated sugar and 1/2 teaspoon cinnamon. Sprinkle evenly over muffins. Bake the muffins for 20 minutes or until the center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack.
