Easy Icebox Éclair Squares


1 4-serving size package sugar-free instant vanilla pudding mix

1 1/2 cups low fat milk

1/2 tsp. vanilla extract

2 cups light whipped topping

9 full sheet graham crackers, divided

Chocolate Fudge Glaze

3 tbsp. semisweet chocolate chips

3 tbsp. nonfat half and half

1/2 cup granulated no-calorie sweetener

1/2 tsp. vanilla extract

1/2 cup powdered sugar, sifted

1/3 cup cocoa powder, preferably Dutch-processed

1. In a medium bowl, whisk the pudding mix into the milk until mixture is smooth and no lumps remain. Fold in the vanilla and whipped topping.

2. Break the sheets of graham crackers in half. Arrange 9 of the 18 halves to line the bottom of an 8 inch square pan.

3. Top the crackers with the pudding, spreading evenly to cover. Arrange the remaining 9 graham cracker halves over the pudding.

4. Prepare the chocolate fudge glaze, and while it is still warm, spread it evenly over the graham crackers. Refrigerate 8 hours or overnight before serving. Cut 3 times each way to serve.
