Creamy Instant Pumpkin Mousse - makes 8 servings

1 (4 serving size) package fat-free sugar-free instant butterscotch pudding mix

3/4 cup low-fat milk

1 (15 ounce) can pumpkin puree

1 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

3 cups light whipped topping, thawed

  1. In a large bowl, beat together the pudding mix and milk until slightly thickened. Add the pumpkin, cinnamon, ginger, and cloves, and mix until well combined.

  2. Gently found in the whipped topping in three additions.

  3. Pour 1/2 cup of the mousse into each of the eight serving dishes. Chill for 30 minutes before serving.
